Candied Lemon Peel

I looked everywhere (Except the high end up market retailers that cost a fortune) for store bought versions of this. I could not find them so decided to make it.

Ingredients

3 Lemons
8 cups of Cold Water
2 Cups of White sugar

Method

  1. Cut lemons into slices about 1/4 inch thick and remove the fruit pulp. Cut the rings in half so the peels are in long strips.
  2. Bring water and lemon peel to a boil in a small pan.
  3. Drain water, and repeat with fresh cold water. But leave to simmer for 5 minutes
  4. Drain the water again and replace with fresh cold water and leave to simmer for 30 minutes.
  5. Combine 2 cups fresh water with 2 cups sugar. Bring to a boil, stirring to dissolve the sugar. Reduce heat to low and stir in citrus peels; simmer until the white pith is translucent. Store peels in syrup, refrigerated, to keep them soft, or allow them to dry. Toss dry candied peels in additional sugar and store airtight at room temperature.

If you didn’t want to use Lemon you can use grapefruit, just boil 5 times changing the water each time to remove the bitterness. If you wanted to use orange just boil once. For all other citrus just use the above method.
