White Chocolate and Raspberry Cookies

I tried using fresh raspberries for this recipe but the cookies turned out like cake not cookies at all, I guess its because I had to add lots of flour to compensate for the juice from the fresh raspberries, then one day it hit me (I was in work doing something totally unrelated) use freeze dried raspberries, none of the extra water to compensate for and an intense raspberry flavour, win win, I tried it and they taste lush 🙂
Ingredients:
- 150g Self Raising Flour
- 50g Butter
- 100g Caster Sugar
- 1 Egg
- 1tsp vanilla extract
- 10g freeze dried rasperries
- 100g white chocolate
Method
- Mix the Butter and sugar in a bowl until creamed together then add the egg and vanilla then beat until combined
- Add the flour to the mix and slowly mix until well combined.
- Add the Freeze dried rasperries and chocolate and mix further.
- I normally now tip this out onto grease proof paper then chill in the fridge for 30min – 1h
- Towards the end of the chilling period pre heat the oven to 170C fan / 190C / Gas Mark 5
- Cut the mix into enough for 10 cookies and bake in the oven for 10-12 minutes
- Leave to cool on the tray then transfer to a wire rack to go cold and crispy
