What makes this different is the filling, Gooseberry Jam and Whipped cream. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">For the Cake<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>250G Self Raising Flour<\/li><li>250G Sugar<\/li><li>250G Butter<\/li><li>4 Eggs<\/li><li>1tsp Vanilla extract<\/li><li>1tsp Baking powder<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the filling<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>Gooseberry Jam (See our gooseberry jam recipe) <\/li><li>300ml Double Cream<\/li><li>1tsp Vanilla extract<\/li><li>2 \u00bd tbsp. sugar<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>Pre heat the oven to 170\u00b0C Fan \/ 190\u00b0C\nElectric \/ Gas 5.<\/li><li>Butter two 20cm cake tins and line with baking\npaper on the bottom. <\/li><li>In a large bowl, combine the butter and sugar\nuntil smooth, light, and fluffy. <\/li><li>Add the eggs 1 at a time until just combined;\nits ok if it is not fully combined at this point it will come together with\nflour. <\/li><li>Add the vanilla and mix until just combined. <\/li><li>In a separate bowl, combine the flour and baking\npowder then sieve into the wet mixture. <\/li><li>Mix well it should look smooth and mousse like. <\/li><li>Separate into the two cake tins and spread out\nto cover the bottom of the tin, the cake doesn\u2019t have to be smooth on top it\nwill smooth out in the oven. <\/li><li>Bake for 25 minutes or until golden brown and a\nskewer comes out clean. <\/li><li>Turn onto a cooling rack and leave to cool\ncompletely. <\/li><li>When the cake has cooled spread one layer with\nJam. <\/li><li>In a mixing bowl combine the sugar, vanilla and\ncream, whip until it is spreadable and not runny. <\/li><li>Spread the cream on top of the jam and place the\nfinal layer on top.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Victoria sponge is a classic British cake and so easy to make, this recipe does not reinvent the wheel so to speak, the sponge cake is a basic sponge you can find anywhere online.
