Perfect with a warm wholemeal crusty roll. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>2 Tbsp Olive oil<\/li><li>2 Onions<\/li><li>2 Cloves of Garlic<\/li><li>1 Butternut Squash cut into small peices<\/li><li>100g Red lentils<\/li><li>1L hot vegetable stock<\/li><li>Coriander leaves<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Method<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Heat the oil in a large saucepan.  Fry the onions with a pinch of salt for 7 mins, or until softened and just caramelized. Add the garlic and cook for 1 min more. <\/li><li> Stir in the squash and lentils. Pour over the stock and season to taste. Bring to the boil, then reduce the heat to a simmer and cook, covered, for 25 mins or until the squash is soft. <\/li><li>Blitz the soup with a hand blender\u00a0until smooth, then season to taste, You could use food processor and blender for ease. <\/li><\/ol>\n\n\n\n<hr class=\"wp-block-separator is-style-wide\"\/>\n\n\n\n<h3 class=\"has-text-color wp-block-heading\" style=\"color:#11be22\"><strong>Top Tip<\/strong><\/h3>\n\n\n\n<p style=\"color:#11be22\" class=\"has-text-color has-medium-font-size\"><strong>You can freeze the soup after step three, just leave it to fool first before placing them in the freezer.<\/strong> <\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I enjoy a good soup for lunch in work, this soup is perfect for a hearty lunch and is bulked out with lentils.
